Le Ping
trained
at the famous SHATEC institute in Singapore and after working in some
of the top Hotels there, was invited to Australia in 2000 to the famous
Regent Hotel in Sydney – the only Australian hotel restaurant to
achieve a two chef’s hat rating - to cook for the delegates of
the Olympic Games. Following this he stayed on working alongside
renowned chef, Serge Dansereau. He was Sous Chef at the three-time
award winning restaurant, Ripples in Milson’s Point and the very
popular Nick’s Bar and Grill in Darling Harbour. He was one of
only a few chefs to be twice invited to work with Tetsuya Wakuda, Neil
Perry, Kylie Kwong and Tim Pak Poy at the Starlight Foundation Dinner
in Sydney.
Simone
grew up in Hospitality, with her
parents owning many successful and award winning restaurants in
Queensland and NSW.
She has been restaurant manager and trainer in several top
restaurants and hotels in Sydney. It was at Ripples in Milson’s
Point where Simone and Le Ping met.
Simone is also a Voice Consultant, having trained at N.I.D.A and has
worked in theatre, film and television in Australia and overseas for
the past 15 years.
